The "H's" of High School Football- Living Legends Phillip Haywood, Hillard Howard, and Dudley Hilton. Also Mike Holcomb who put Breathitt on the map.
Tim Couch- The #1 NFL draft pick was also the #1 HS Recruit in the country. His home games were an exhibition every time he played drawing National Media, Sports Illustrated, and the most elite collegiate coaches in the country.
There is also another version of KY's version of Hoosiers, tiny Cuba High School in far western Kentucky, in Graves County (just outside of Mayfield for you football guru's) won the '51 (I think) Sweet 16 beating Henry Clay I believe.
It's either '51 or '53 when they won it, there is a book written on it that is a great read for all Kentucky sports fans, entitled, "When Cuba Conquered Kentucky" written by MaryAnne Walker.
