Why doesn't Pike County have a sportsplex like Knott County? I would think that enough money could be found to start one.

If every county had a Sportsplex none of them would succeed, so everyone should be happy there is a Sportsplex in East Ky. (Knott County) and enjoy it. Every county needs is own unique facility and others need to support it i.e.
Pike Co.- Expo Center
Floyd Co. - MAC
Knott Co. - Sportsplex and so on.

I've heard there is a bunch of apartments and restaurants going to be built up there?

They sure have enough room. They could build anything they wanted to up there.

Somewhere for the kids to eat and hang out in a different environment close to the Sportsplex would be a profitable business. An arcade and some grub that aren't provided within the Sportsplex could go in up there.
